Homemade Mayo

This creamy, easy to make mayo is perfect. It combines healthy oil with a protein rich egg and tangy mustard, and gives you what you’re looking for in a versatile homemade mayo.

Keeping an arsenal of good quality recipes for basic pantry needs is something that I highly rely on. If I need something, but don’t have it, I am stuck. The ability to quickly whip up a healthy homemade mayo, without all of the extra ingredients, and expense of running to the store, is worth it.

I usually use avocado oil for this quick recipe, but you can easily substitute olive oil. Avocado oil gives the mayo a very light flavor and olive oil tends to be a little heavier.

Let’s Make It

Simple ingredients such as oil, egg, salt, mustard and lemon juice are all you need to get this recipe going.

First, you’ll grab a wide mouth ball jar that’s a pint size or bigger. Then all you have to do is measure your ingredients into the jar. I start with the avocado oil first, then drop in the egg, and the rest of the ingredients.

Once your ingredients are in the wide mouth jar, you can use your handy immersion stick blender and start making your homemade mayo.

When you first start the blender, you’ll want to keep the blades at the very bottom of the jar and blend. Soon, you’ll start to see the mayo thickening in the bottom of the jar. As it starts to thicken, you can raise the blender up and down gently as you incorporate all of the oil.

Soon, your jar will be full of fresh, homemade mayo and when all of the oil is incorporated, it’s done. This recipe makes 1 1/4 cups of mayo.

Making this homemade mayo is such a wise investment for your family. The healthy fats, combined with the protein are a great addition to your sandwiches, sauces, and salads. Not to mention, it’s fast, easy to make and delicious!

Variations

Some ways to change up the recipe are to use an olive oil instead of avocado, or use a yellow mustard instead of Dijon mustard. Fresh lemon juice is delicious, however, bottled lemon juice will work perfectly as well. Once your basic recipe is finished, the options for this homemade mayo are endless. Enjoy!
